rocking dinner lately at my house. Well, my ideas have been rocking at least. The execution has been pretty good...but not great.
Tuesday night: Roasted butternut squash and shallots with freshly chopped thyme, creamy grits topped with two different kinds of delectable mushrooms, and hot baked garlic bread. For dessert, dark chocolate brownies with vanilla ice cream and a pureed sweet raspberry sauce.
Wednesday night: (had to go simple b/c ran out the door to mutual) Sticky rice and potstickers.
Tonight: Spaghetti, parmesan sauteed acorn squash and zucchini, and freshly baked pizza topped with sun-dried tomatoes, ricotta cheese and basil. For dessert, little baked apple pie turnovers.
Tuesday's dinner was wonderful. Smashing, really. Jeff did half of it, so I gotta give him props there. His grits were outta this world. I really wish I would have taken a photo of it, because it was gorgeous. The squash dish was like the most beautiful autumn you have ever seen, on a plate. And we ate it by candle light, which I must say was divine.
Tonight's dinner, on the other hand, was just okay. The pizza was pretty good, but definitely needed a few tune ups here and there. And the dessert was okay too--I have some ideas of how to make it better.
Lately, all I can think about is autumn. I need to stop burning my pumpkin spice candle because it is driving me nuts. It smells and feels so much like fall, but then I go outside and it is still 90 degrees. Actually, today was around a gorgeous 82 degrees or something.
I CANNOT WAIT FOR HALLOWEEN though. This year, I am going to try throwing a Halloween party. I have always wanted to do one, but never actually done it. You all are invited, I just need to come up with the ideas first. I'm thinking a lot of spooky decorations, gorgeous autumn colors, bobbing for apples, Hocus Pocus, a costume contest, carving spooky shrunken apple heads and maybe more. Bekah is going to plan it with me and she wants to do a Thriller dance or something. I'll probably just watch her and her friends do it, then clap.
Speaking of me not being able to dance, I've been going to Zumba lately. Thanks to Carli, I'm actually doing some exercise and it feels good! I know I look completely stupid because I have no rhythm and can't ever get the steps right, but everyone just seems to be having a good time there and not judging, so it's all good. Tuesday mornings at my stake center--it's awesome. I have to work off those apple tarts, if you know what I'm sayin.
Question for the void out there that is the interweb. Does anyone still read this blog? I mean, I understand if not because I don't really ever post anything and everything I do post is pretty boring, but still...is there anyone out there? I know I look at a bunch of people's blogs and never comment on them, but I still hope that they post stuff. Like all the time. Cause I look at their blogs everyday. Does anyone do that to me, or am I the only crazy one? Is that too creepy and stalkerish?
I dare you to find a creepier picture than that one. Seriously. That's the stuff nightmares are made of.

I've never made butternut squash, but I think I'd like to try. I miss seeing new recipes on your food blog. Halloween parties are so fun! I saw some finger molds at Michael's to make cookies--so cool. As for the blog reading thing, I don't think anyone is out there anymore. I know making it private has shut out a few, but it was slowing down before that. I just have to remember why I'm doing it--journal, journal, journal. I love going back to things I've written and saying, "Oh, yeah. I forgot about that." I don't comment on every blog I stalk, but I try to at least once in a while. I love reading your blog, so don't stop!

OH MY GOSH! Why are you making all this delicious food without me?! My dinners lately have consisted of bagels or fried eggs or Special K cereal. The fanciest meal that we have had was some lemon pepper chicken, that I made, with a box of alfredo pasta, zucchini and some "fake" potatoes. It was pretty dang elaborate...
I can't believe you are having a Halloween party without me... I bet you are going to have the Harry Potter party without me to! Rude.

I try to comment, but not on everyone's. I am sooo glad that you are liking Zumba. I told you everyone kinda does their own thing and there is no judgement. I am hoping to go one last time before baby comes. Then take a few weeks off. But when I can come back it will be with full force to lose all this dang weight.
By the way, your dinners sound amazing. I should really try to make better dinners. However our dinners our usually at lunch time so Mark can have a good meal. Our schedule is all messed up
